Known for attracting some of the nation’s finest chefs and up and coming culinary artists, the Lake Tahoe Autumn Food and Wine Festival celebrates 24 years September 11 – 13 at locations through North Lake Tahoe and The Village at Northstar.
James Beard awarding winning chef Traci Des Jardins leads the festival’s celebrity chef luncheon at Wild Goose in Tahoe Vista on Saturday, September 12. The Ritz-Carlton Highlands, Lake Tahoe will be North Tahoe’s first five-star caliber resort and is located mid-mountain at Northstar-at-Tahoe ski resort.
“The Manzanita tree is ubiquitous in California, but it particularly reminds me of the Sierra Nevada of my native state,” Des Jardins, a San Joaquin Valley native, said. “I was inspired by the symbolism of the Manzanita tree and plan to create a menu that reflects the region’s rich offerings.”
The menu combines Des Jardins’ signature French inspired California cuisine with a regional mountain resort influence and features dishes that source organic, sustainable and locally grown meat and produce. Menu items include Liberty Farms Duck Meatballs with Mission Figs and Lucques Olives, Dungeness Crab Sliders, Spiced Chutney and Potato Chips, as well as Pizza with Pancetta, Goat Cheese, Sundried Tomatoes and Green Onions, along with Rotisserie Wolfe Ranch Quail, Bread Salad, Pancetta and raisins.
Additionally, Chef Lars Kronmark of the Culinary Institute of America at Greystone in St. Helena, California returns to the festival to give a lively Japanese grilling demonstration. Mark Estee of Moody’s Bistro and Lounge and the new Baxter’s Bistro in Truckee, demonstrates the roasting of a whole hog with tasting and wine pairing. Jason Gronlund, resident chef of Tabasco from Avery Island, Louisiana, hosts a cooking demonstration as well as provides spicy creations for the Charbay tequila release party.
